Serves 8

  • 6 cups Pictsweet Cut Green Beans
  • 1 thinly sliced red onion
  • 1 red bell pepper, seeded and cut lengthwise into strips
  • 1/4 cup raspberry vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup olive oil
  • 1/2 cup chopped fresh mint


Place frozen beans in a saucepan and cover with water. Place on stove top and bring to a boil. Boil 3 minutes. Drain. In a large serving bowl, toss together the green beans, red onion, and bell pepper. In a small bowl, whisk together vinegar, mustard, sugar, salt and pepper. Slowly whisk in the olive oil until thick. Add half of the mint and mix well. Drizzle the dressing over the vegetables and toss well. Just before serving, sprinkle with remaining mint. Serve at room temperature.
