Ingredients

Serves 6

  • 5 cups Pictsweet frozen Sliced Yellow Squash
  • 1 cup mayonnaise or salad dressing
  • 1/2 cup Pictsweet frozen Chopped Onions
  • 1/2 cup Pictsweet frozen Chopped Green Peppers
  • 1/4 cup butter or margarine
  • 1 cup instant rice, uncooked
  • 2 eggs, well beaten
  • 6 ounces processed cheese, cut into small cubes
  • 2 teaspoons minced garlic
  • 1/8 teaspoon pepper
  • 1 can (10 3/4 oz.) mushroom soup
  • Cracker crumbs

Directions

Cook frozen squash according to package directions. Drain. Combine all ingredients, except cracker crumbs and spoon into a 9 x 13 baking dish. Top with crumbs. Bake at 350 degrees for 25 to 30 minutes or until bubbly hot.
